Yeast is a eukaryotic microorganism. Yeast is used in baking as a leavening agent; it does this by converting sugars present in the dough into the carbon dioxide. This causes the dough to rise as the carbon dioxide causes gas pockets/bubbles. Yeast is ideal for any baking purpose where yeast is needed, for example bread making.
