To cook: rinse rice in cold running water. Using 1 1/2 cups water to 1 cup rice, quickly bring to the boil in uncovered pot. Then put lid on and reduce heat to a simmer for about 20 minutes. Turn off heat and let stand for another 15-20 minutes. Fluff and serve.
