French green lentils are smaller, more firm, and have more of a peppery taste than standard green lentils. They also have a higher protein content. Green lentils take the longest to cook of the lentil family, but they keep a firm texture even after cooking making them ideal for salads and other side dishes.

TO COOK: Rinse. Add 1 cup of lentils to 4 cups boiling water. Cover and simmer for 20-25 minutes, until tender.
