Penne comes from the Italian word for 'quill' (or pen), and gets its name from its shape – a short cylinder-shaped pasta that has angled edges. This version of penne is actually the rigate (ridged) version. Thanks to its ridges, the rigate version is a bit sturdier and tends to soak up more sauce than smooth penne.
