Kidney beans are a variety of the common bean (Phaseolus vulgaris), a legume native to Central America and Mexico.

Athough often associated with chilli con carne the red, organ-shaped beans have a soft, buttery interior texture that taste great in a variety of soups, pastas, chillis, and salads.

Kidney beans are among the best sources of plant-based protein. They’re also rich in healthy fibers, which moderate blood sugar levels and promote colon health. Kidney beans are a good source of several vitamins and minerals, such as molybdenum, folate, iron, copper, manganese, potassium, and vitamin K1.

To cook: Dried beans should be soaked overnight. Red kidney beans are poisonous if not boiled furiously for 20 mins during their initial cooking. The secret is never, ever to cook them in the water in which they have been soaked but to drain and then rinse them well before putting into fresh water. The soaking water absorbs much of the ingredient that upsets the gut.
