Couscous is a North African dish made from tiny steamed balls of semolina flour. Though we think of it ang cook it as a grain, couscous is actually a pasta. It's one of the easiest, fastest, most versatile side dishes you can make. Use in everything from breakfast dishes, salads, hearty mains and even desserts.
To cook: Add 1 1/2 cups boiling water or stock and a knob of butter (or olive oil) to 1 cup of couscous in a bowl. Cover and let stand for 15 minutes. Then fluff up with a fork.
